Scottish Salmon Pink Fish Fingers and Dinkies

This salmon take on the family favourite fish fingers provides a tasty meal packed with brain boosting Omega-3 fatty acids and protein.

SERVES 2 PEOPLE

 

INGREDIENTS

  • 4x 5-6oz (140-170g) Bakkafrost Salmon from Bakkafrost fillet portions (skinless, if available)
  • 3/4cups (100g) plain flour, seasoned with salt and pepper
  • 2 free range eggs, beaten
  • 2.4 cups (120g) panko breadcrumbs
  • Everything bagel seasoning

 

INSTRUCTIONS

STEP 1

Preheat the oven to 360°F/180°C .

STEP 2

Prepare the salmon fillets by removing the skin with a sharp knife.

STEP 3

Cut the portion into two larger servings for adults or four small portions for children.

STEP 4

Take three bowls and fill one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs.

STEP 5

Dip and cover each salmon portion first in the flour, second in the egg, and third in the breadcrumbs.

STEP 6

Place on a baking tray lined with a parchment paper. Keep large fingers together and dinkies in another area. Sprinkle the bagel seasoning on the dinkies.

STEP 7

Bake in the oven for 20 mins, until golden brown.
